What's your cheesecake?

This year for Shavuot, being that i can find Chalav Yisrael ingredients in the local Kosher Supermarket, i decided to experiment with cheesecake...and since i am Italian, i want to try to bake Ricotta Cake, a cheesecake with a twist: instead of cream cheese, the recipe asks for ricotta cheese, a typical Italian cheese.
Here is the recipe, i hope it will come out good!

Torta di Ricotta con Cioccolato

For the crust:
Use any pastry dough recipe that you have: i use Hamantaschen basic dough, and it works perfectly as crust for all my tarts!

For the filling:
400 gr Ricotta Cheese
2 Eggs, separate yolk and white
100 gr sugar
rind of 1/2 lemon
juice of 1/2 lemon
1 tablespoon flour
chopped bittersweet chocolate (as much as you want)

Mix ricotta and sugar until smooth, ad flour and yolks, then the lemon rind and lemon juice, fold in gently the whipped egg whites, and add the chocolate pieces.
Bake at 180 C for 30/40 minutes.
