Amaretti!
Amaretti
550 gr almonds, toasted
500 gr sugar (200 gr confectioners sugar and 300 gr granulated sugar)
5 egg whites
almond extract and/or Amaretto liquor
Powder the almonds in a mixer together with some of the sugar. Add the mixture to the rest of the sugar, and the rest of the ingredients, egg whites not whipped but lightly beaten.
The dough will be pretty sticky, but you should be able to form little balls that you will roll in sugar and then put on parchment paper.
Decorate each cookie with an almond on top.
Bake at 340 F for 20 minutes.
