Apple yeast roll - The recipe
Here is the recipe:
For the dough:
-fresh yeast (enough for 6 cups of flour)
-200 ml lukewarm water
-5 tablespoons sugar
-3 tablespoons sunflower oil
-1 teaspoon salt
-6 cups flour
For the filling:
-2 or 3 apples
-6 tablespoons sugar
-6 tablespoons powdered toasted hazelnuts
-1 vase apricot jam
Melt the yeast in half the water, add a teaspoon of sugar and let it sit until it bubbles.
In a big bowl, pour the flour and make a niche in the middle, where you will put the sugar.
Pour the water with the yeast, mix a bit with your hands until the water is absorbed, then add salt and oil, adding the rest of the water little by little.
Put the dough in a bowl, and let it raise covered until it doubles.
With a rolling pin create two rectangles of dough about 1/2 inch thick, and spread apricot jam on both of them, then a layer of thinly sliced apples, then a layer of sugar and then the hazelnuts.
Roll each rectangle like you would to make a jelly roll, and seal the end very well.
Preheat the oven to medium temperature (170 C), and bake until golden.
If you want, you can brush the rolls with water and sprinkle some sugar on top.
