Sufganyot recipe

Today i crave sufgayot...after all, i ate just a couple of them at the Synagogue party, and that is definitely not enough for the whole Channuka!!! So to try to fix the situation i am probably going to make another batch just for us this afternoon :P
Here is the recipe that i use, with the auxilium of a bread machine (but it can be made without one, just like you would prepare your challa dough):

Sufganyot
Ingredients:
  • 200 ml lukewarm water;
  • 200 ml soy milk;
  • 4 or 5 tablespoons sugar;
  • fresh yeast (enough for 900 gr of flour);
  • 5 tablespoons sunflower oil;
  • vanilla sugar;
  • 1 teaspoon salt;
  • 6 cups flour
  • Preserves, custard or any other filling you like
  • Confectioner's sugar
Melt the yeast in the water with a spoon of sugar, wait until it bubbles.
Then pour it in the bread machine container, and add all the other ingredients: soy milk, sugar, oil, salt, flour.
Set the bread machine for the "knead" program. It should take a little over an hour.
When it's ready, roll the dough to 1 1/2 centimeters, then cut circles using the edge of a glass cup or a round cookie cutter.
Let the circles raise until the double in size, and the turn on you fryer (or heat up sunflower oil in a medium frying pan).
Fry 4/5 sufganyot at the time, turning them once.
Drain and let cool off, then with a syringe fill them up from the top with preserves or custard or any other filling of your choice, and sprinkle with confectioner's sugar.
